When we first started Eno tech, we would taste each wine the way I did in sommelier class, exploring color, flavors, and aromas.  I wanted our first Enotech of 2020 (and Season’s 25th year of business) to get back to these roots, the way things started.  We are kicking off the roaring 20’s with an event we are calling “Bold and Beautiful”.  I chose some of my favorite wines, and asked our new chef, Shane Lovelady, who has been doing an amazing job representing fine dining with seasonal local cuisine, to pair 5 courses to these wines.  I think that people get in a routine with what they eat and drink and I wanted to share something more exciting.  These are wines and dishes that I serve in my home to my guests, and really it’s all about trying new things.  If you ask someone who is in the business what their favorite is, you get a complex answer because what makes something tastes great can be the way a light white wine with great acidity washes down a spicy dish, or what the drought in a certain valley in California is doing to the terroir of a particular vineyard.  It’s not so much about one wine or profile, but the exploration of the world from which it comes, the seasons, the different ways it can complement a dish–what flavors will it highlight or soften?  What does it bring out?  Who are you around and what is the experience you are sharing? This is why I am in this business and I am excited to share it with our guests tonight.
